This wine was made from handpicked fruit from the Crabtree Estate’s original old well block or Windmill Vineyard. These low cropping, dry grown vines are over 30 years old and are still carefully handpruned to rod and spur. The wine was open fermented in 2 tonne vats, gently hand plunged and basket pressed. It was then aged in one and two year old French barriques for 18 months. The 2008 Crabtree Windmill Cabernet is fragrant and lifted with violets and sweet black current fruit. Fine grained tannins coat the palate and deliver grip. While accessible as a young wine in the first year of release this finely balanced Cabernet will develop gracefully for 6 – 8 years. Decant before serving.
